The Long Clawson Dairy combines Stilton Blue Cheese and Double Gloucester into a layered cheese that looks like a cheese cake (not to be confused with “cheesecake”). It is layered by hand and is labor intensive, with the bold, full-bodied Stilton layered between the mellow, satiny layers of Double Gloucester.
Storage tip: Wrap in waxed paper and then over-wrap in plastic. This will prevent the strong flavors of the Stilton being transferred to other cheeses and foods in your fridge. Store in the cheese drawer or vegetable drawer.
I give Huntsman Cheese 3 Paws out of 4 Paws (cause that’s all I’ve got).
Serving Suggestions: A wedge is a perfect addition to a cheese board. It is also a nice melting cheese and can be used on pastas or in casseroles. Substitute this cheese for any recipe that calls for Stilton.
Wine Pairings: Chenin Blanc, Sauvignon Blanc or a sweet Port. Avoid red wines.
